Lamb Rogon Josh Recipe
1kg on the bone or off the bone mutton/lamb meat-cut into small pieces
5 cups boiled water
2 1/4 tsp salt
2 Tbsp ginger /garlic paste
1 cup pure ghee or cooking oil
4 cloves
8 green cardamoms
1 tbsp turmeric powder
2 large onions paste-fried
1 tin or 5 chopped tomatoes
2 tbsp tomato puree
1 tbsp meat masala mdh
1tsp Garam masala
Some fresh coriander
How to the Make Rogan Josh
Boil the meat in the water; remove the scum with a ladle until the water is clear.
Add the salt and cloves along side the cardamom . Boil until the meat is half done.
Remove from heat and keep aside.
Meanwhile, in a separate pan heat the ghee or oil in add the garlic ginger paste , turmeric, chilli, tomatoes and onions saute until they are nicely cooked with oil or ghee separated.
Add boiled meat with the water .
Add the meat masala and tomato puree, boil for 10 mins then simmer until meat is tenderly cooked
Stir in the garam masala at the end garnish with fresh coriander.
Serve with tava roti , naan or pilau rice.
